Cauliflower Macadamia Nut Raisin Stir Fry


Serves 2

2 cups cauliflower florets
2 Tbsp. coconut oil
1 small onion, sliced in 1/2 moons
1 medium carrot, sliced thin on a diagonal
1/2 cup sun dried tomatoes, soaked, drained and chopped
1/4 cup macadamia nuts
1/4 cup organic raisins
1/4 tsp. ground turmeric
salt and pepper to taste

Steam cauliflower for 8-10 minutes. 

In skillet, saute onion in coconut oil for about 3 minutes.  Add cauliflower and rest of the ingredients.  Stir and sauté until liquid is absorbed. 

This dish is good served as is or over cooked quinoa.
