Strawberry Spinach Quinoa salad with Orange Vinaigrette


Makes 6 servings

3 cups cooked quinoa
2 cups fresh spinach, washed, dried and thinly sliced
1 1/2 cups strawberries, sliced
2 green onions, thinly sliced
1/4 cup fresh squeezed orange juice
2 Tbsp apple cider vinegar
1 Tbsp. Dijon mustard
1 Tbsp. raw honey or 1 dropperful liquid stevia drops
2 Tbsp. olive oil
Salt/pepper to taste

For a warm salad: 
In pan, warm quinoa and toss in spinach, strawberries and green onions. 

For a cool salad:
In a large bowl, stir quinoa, spinach, strawberries and green onions together.

In a bowl, whisk orange juice, vinegar, mustard and honey/stevia together.  Add olive oil and blend well.  Season with salt/pepper to taste.  Pour dressing over quinoa and toss gently.  Sprinkle with slivered almonds (optional).
