The best healthy mashed "taters"


These aren't your standard cauliflower mashed taters!

THE SECRET is to add one small potato to give the cauliflower mash the look, taste and texture of regular mashed potatoes.

INGREDIENTS:

1 large head organic cauliflower

1 small russet potato

Garlic powder to taste (optional)

Salt

1-2 Tbsp Ghee (clarified butter)

dairy-free milk (enough to get the consistency you desire)

Chop the cauliflower and potato into small pieces and steam until tender. In a food processor, add the steamed veggies, ghee, garlic powder and salt. Process until "mashed". I always add dairy-free almond milk (about 1 Tablespoon at a time) while processing until you get the consistency you desire.

Taste and adjust spices as needed.
