Gluten Free Holiday Stuffing Recipe


Serves 6 Ingredients: 1 1/2 cups millet 1/2 cup amaranth 6 cups water 1 bay leaf 1 medium onion, diced 2/3 cup diced celery 3 cloves garlic, minced 1 Tbsp. ghee (clarified butter) 2 tsp. dried sage 1 tsp. dried thyme 1 tsp. Herbs D' Province* Sea salt to taste In a saucepan, bring millet, amaranth, water and bay leaf to a boil. Cover and reduce heat to low. Cook for 30 minutes, or until water is absorbed. Remove bay leaf. Place grains in a large bowl. In a skillet, sauté veggies in ghee over medium heat until tender but firm. Add herbs to mixture and sauté for about 30 seconds to incorporate spices. Add veggie mixture to the grains and stir to mix. Adjust seasonings to taste and serve. *Herbs D' Province is an all around spice mix that goes great on salads, over chicken or anything that needs a little more flavor. Look for it in health food stores or online.
