Roasted Cauliflower


Serves 4: Ingredients: 1 large head organic cauliflower (2.5 to 3 lbs) 2 Tbsp. grape seed oil 1/4 tsp. salt Put oven rack in middle position and preheat to 450. Cut cauliflower into 1" florets Place cauliflower into a bowl and toss with oil and salt. In a large shallow baking pan, spread cauliflower in a single layer. Roast for 25-35 minutes, stirring and turning over occasionally.
