Quinoa Salad with Apples


Prep Time 20 min Cook time 30 min Serves 4 Ingredients: 3 cups cooked quinoa 1 apple, diced 2 celery stalks, finely chopped 1 bell pepper, chopped 1/2 bunch green onions, chopped 1/2 cup walnut pieces (soaked) 1 cup cooked chicken, cubed 3 Tbsp. flat leaf parsley, chopped 1/4 cup apple cider vinegar 2 Tbsp. lemon juice 3 Tbsp. olive oil Directions: Soak walnuts in water for 2 hours to bring out their nutrients and rinse off their tannins. Drain and rinse, discarding soak water. In a large bowl, combine all ingredients. Toss mixture lightly. Serve at room temperature or chilled.
