Kale Avocado Salad

Serves 1-2 Ingredients: 1 bunch kale 1 large tomato 1 avocado 1 stalk celery 1/4 cup olives 2 Tbsp. olive oil 2 tsp. lemon juice 1 tsp. salt 1/2 cup pine nuts Optional ingredients: 1/2 cup dullse 1 cup shredded veggies Wash kale and remove stems. Finely chop leaves into a bowl. Add salt and massage with your hands until kale is wilted. Add lemon and massage again. This tenderizes the kale and makes it better to eat. Add tomatoes and olives. In a small food processor, blend avocado, olive oil, and celery to make a cream. Pour over the salad and mix to incorporate.
