Low Glycemic Ice Cream

Making your own low-glycemic ice cream is easy!  Just remember to start the recipe the night before so the nuts have enough time to soak and soften.




2 cups water

1 cup macadamia nuts (soaked)

1/4 cup raw honey

1 Tablespoon vanilla

Pinch of sea salt


To soak the nuts, combine the water and macadamia nuts in a glass jar and allow to sit overnight.  Drain and place in a high speed blender.  Add the honey, vanilla and salt and blend until emulsified.  Freeze in an ice cream maker according to manufacturer’s directions
