The avocado in this recipe adds the healthy fats and staying power to keep you full until your next meal.
1 lb broccoli
1 Tbsp. olive oil
2 Tbsp. freshly squeezed lemon juice
1 Tbsp. grainy prepared mustard
Trim and wash the broccoli and cut into bite sized pieces. In a bowl with a steamer, add 1" water and bring to a boil. Add broccoli to the steamer and steam just enough that broccoli is bright green and crunchy-tender. Remove from the steamer and place in a large bowl to cool.
Peel and pit the avocado then cut into small cubes. Add to the broccoli bowl and stir together.
Whisk the olive oil, lemon juice and mustard together in a small bowl until well mixed. Toss the broccoli and avocado with the dressing.
