Garlic Spinach Miso Soup

Serves 2


4 cups organic broth
2 cloves garlic, minced
3 Tbsp. minced fresh ginger root
1 small onion, diced
1 red pepper, diced
2 carrots, thinly sliced
4 cups spinach, torn into bite size pieces
miso (to taste)

Bring broth, garlic and ginger to a boil.  Add veggies and cook until tender.  Stir in spinach.


Let cool and place into serving bowls.  Stir in 1 tsp. miso (or to taste) in each bowl.  Serve.
