1 bunch celery, chopped 4 cups filtered water 1/4 cup olive oil 1/4 cup lemon juice 1 avocado 1 tomato, sliced 1 Tbsp. raw honey (or 1 dropperful liquid stevia drops - or to taste - for Phase 1) salt and pepper to taste
Place all ingredients into a high speed blender, such as a Vitamix. Blend until smooth.
If you like this warm, you can continue blending until it is slightly warm (Vitamix blenders can warm soups too)! This is a raw food soup so it is full of healthy enzymes. If heated too much, those enzymes and some nutrition will be lost!
