Making your own low-glycemic ice cream is easy!  Just remember to start the recipe the night before so the nuts have enough time to soak and soften.


2 cups water

1 cup macadamia nuts (soaked)

1/4 cup raw honey

1 Tablespoon vanilla

Pinch of sea salt

(makes 4-8 depending on bowl size)

2 large eggs (3 if they are the small organic ones)

2 Tablespoons honey

1-2 tsp. ground cinnamon

¼ tsp. ground cloves

¼ tsp. ground ginger

1 tsp. ground nutmeg

½ tsp. salt

1 15 oz. can organic pumpkin

1 13 oz. can organic coconut milk

In a bowl...

1 ripe avocado
1/4 cup cacao powder
1/4 cup non-dairy milk (such as almond milk or hemp milk)
1/4 tsp. vanilla
1/4 tsp. cinnamon
2 Tbsp. raw honey
1 dropper-full liquid stevia

Place all ingredients in a blender.  Blend until smooth, scraping...
